[Chef introduction]
Ise Creative Bistro mirepoix (Mirepoix) Owner Chef Shintaro Okada
Born on February 5, 1977 in Ise IseCity Prefecture.
Graduated from Osaka Abenotsuji Culinary School
Umashikuni Ise Chef Club Member

After graduating from vocational school, he trained at various restaurants and opened "Ise Creative Bistro mirepoix" in 2012. With the desire to share the wonderful ingredients of Ise, where he was born and raised, with as many people as possible, he offers dishes that make the most of seasonal ingredients with a focus on production areas and seasons. He says, ``Mirepoix is all about the producers,'' and when selecting ingredients, he visits the production areas himself, sees, feels, and talks with the producers, and uses the quality of the ingredients in his ideas for dishes. We also believe that there are things that can and should be done through food in the areas of environmental issues, the origin of medicine and food, regional revitalization, international exchange, swallowing food, sports food, and the inheritance of traditional culture. ” continues to be pursued.
