1. What is ShisuiJikkaten?

ShisuiJikkaten is YokkaichiCity certified specialty product brand that was born this year with the concept of ``special moments with special commitment.'' Certification standards are

③Products that can be differentiated within the industry

④Products that match the brand concept of “ShisuiJikkaten”

As of August 2023, eight products have been certified, including hinaga fans, sweets made with kabusetea, and Banko-Yaki rice pots. The company plans to gradually increase the number of certified products in the future.

It will be sold at Plug's Market on the 2nd floor of Kintetsu Department Store Yokkaichi Store and the Local Products Hall until August 15th, and inside Kintetsu Yokkaichi Station from September 15th to November 14th.

2. Collaboration between specialty products! Hand-stretched somen using Kuki Taihaku genuine sesame oil

This somen is a collaboration between ``hand-stretched somen'' made using a traditional method that has been around since the end of the Edo period, and sesame oil from Kuki Sangyo, a specialty of Yokkaichi. This is a new product from Watanabe Tennobu Noodles, which stands out from other somen noodles because of its smoothness, elasticity, and strong umami.

Goldfish Inrushi Oyachi hand-stretched noodles have been around for 200 years since the Eji period.

3.Proof of high quality noodles! “Goldfish Brand Oyachi Hand-stretched Noodles”

In the Oyachi area YokkaichiCity, during the Edo period, a watermill was built on the Asaaki River, which is rich in minerals, and it was the perfect place to dry noodles with the cold wind ``Suzuka Oroshi'' that blows down from the Suzuka Mountains, so noodles were made there. has been carried out. At its peak, there were more than 300 noodle farms, but now there are only about a dozen.

Hand-stretched noodles are made by applying cooking oil to the dough, twisting it, and stretching and aging it over and over again. Because the noodles are not cut with a knife, the noodles are smooth and firm.

Even in the Oyachi area, there are few places that make noodles by hand, and only the five that use high-quality flour can call themselves ``Kingyo Oyachi hand-stretched noodles.''

Somen is manufactured during the three months of winter.

4.300 years of tradition! Watanabe hand-rolled noodle shop

Watanabe Hand-rolled Noodles is highly acclaimed as a producer of natural foods that use high-quality wheat flour and do not add any additives. Each noodle is made by hand, preserving the 300-year-old traditional taste.

The noodles are rolled out repeatedly as they age, gradually becoming thinner. To prevent the noodles from drying out and to prevent them from sticking to each other, the noodles are stretched while being coated with oil.

Normally, corn oil is used, but the signature product, ``Kuki Taihaku Genuine Sesame Oil Oya Chite Dry Noodles,'' uses Kuki Sangyo Co., Ltd.'s colorless and odorless Taihaku sesame oil, and is popular for its smooth and umami flavor. there is. 5. Difference between somen and hiyamugi

By the way, can you explain the difference between "somen" and "hiyamugi"?

Somen and hiyamugi are noodles made from wheat flour, and differ depending on their thickness. The thickness of somen is determined by JAS (Japan Agricultural and Forestry Standards) to be 1.3 mm or less in diameter, and hiyamugi is 1.3 mm or more and 1.7 mm or less.

Hiyamugi will be a little thicker. By the way, anything over 1.7mm becomes udon.

Denshichi residence

The Denshichi residence has been used as a villa for Toyobo founder Denshichi Ito since 1889. Later, as ``Ryotei Shigeru Hamamatsu,'' it became loved by members of the imperial family, the political and business circles, and the entertainment world, and became a guesthouse for VIPs. However, due to the deterioration of the building and the lack of a successor, it was sadly closed in 2017.

From 2018, the 11th generation of the Kuki family, Monshichi Kuki, who was a comrade who worked hard to develop Yokkaichi during the same era as Denshichi Ito, has taken over the business, and has established the following three concepts: "communication," "information dissemination," and "next-generation education." Aiming to be a hall where people and culture can interact, it is operated as ``Denshichitei.''

It has a two-story wooden building and a Japanese garden on a site of approximately 600 tsubo, and the entrance building and the gabled Satsuki building are registered as national tangible cultural properties. Supervised by Kihachi Kumagai, the dishes that bring out the deliciousness of the ingredients to the fullest without being bound by genre or common sense are popular, and on weekday lunches, the ``Mie Kogane Udon & Beef Shabu Zen'' using udon from Watanabe Tennobu Seimenjo is served. The ``Hiyamugi Gozen'' is a set of Hiyamugi using Kukitaihaku sesame oil from Watanabe Temen Seinjo, 6 types of seasonal vegetable and shrimp tempura, and Inari sushi with Takuan for 2,200 yen including tax.

There are 3 types of soups that are carefully selected by Denshichitei head chef: chicken soup noodle soup made with chicken stock and bonito stock, sesame noodle soup based on Kuki Sangyo's sesame seeds, and special tomato soup. Chicken dashi noodle soup has been commercialized and sold at Denshichitei. Sesame noodle soup is also scheduled to be released in September.

The breakfast served to guests at the restaurant and guest lounge "Palmiere" on the first floor of Miyako Hotel Yokkaichi uses Hiyamugi from Watanabe Tennobu Seimenjo and is served as "Yokkaichi Hiyamugi." Many guests from outside the prefecture say, ``Hiyamugi is rare, not somen,'' and it has a good reputation. There are also condiments such as ginger, green onions, and bonito flakes, as well as side dishes using okra, komatsuna, and chirimenjako. In winter, it will be served as Nyumen, and it will be served for breakfast all year round.

The summer night buffet also includes gyoza and fried dumplings invented by high school students.

At the summer night buffet that will be held from 6:00 pm on Sunday, August 13th, there will be ``Yokkaichi Hiyamagi Gyoza'' and ``Hiyamagi Fried Dango'' made with Hiyamagi from Watanabe Tennobu Seimenjo, which were invented by students of Mie Prefectural Yokkaichi Agricultural High School. is provided.

Boiled hiyamugi is seasoned with soy sauce or sesame oil, wrapped in gyoza skin, and deep-fried to make fried gyoza. Even though it doesn't contain meat, it has a rich and firm texture. Fried dumplings are inspired by sesame dumplings, and are made by wrapping shiratama dumplings in strained bean paste and using boiled hiyamugi as a batter for frying.

For this interview, I visited Denshichitei and Miyako Hotel with Ms. Michiyo Watanabe of Watanabe Handmade Noodle Shop, and had delicious chilled barley gozen.
Denshichitei is a cultural property that is worth seeing, and I felt a sense of tradition and history. At Miyako Hotel, we also had Hiyamagi Gyoza and Hiyamagi Fried Dango.
The head chef used innovative ideas unique to high school students to create a buffet menu by adjusting the seasoning mix, and the food was delicious.
