The history of Western cuisine is the history of Toyoken

Restaurant Toyoken is located in a corner of TsuCity City near the Tsu Castle ruins. It has a long history and was founded in 1889. It began when it opened in Mita, Tokyo under the name "Imafuku". In 1899, ``Western Cuisine Toyoken'' was opened adjacent to ``Imafuku'' at the recommendation of Hirobumi Ito and successive ministers.

At that time, Toyoken, Seiyoken, and Chuotei were the pioneers of Western food culture in Japan, and among them, Toyoken was a purveyor to the Imperial Household Ministry and would travel to banquets at the Imperial Palace.

Past chefs include Eishichiro Kitagaki, Tokuzo Akiyama, famous for being the Emperor's cook, and Keinosuke Takaishi, who invented Japan's first cream croquette and also served as the chef at Ginza Shiseido Parlor. I'll connect it.

Then, in 1938, at the recommendation of KawakitaHandeishi, the president of Hyakugo Bank and a potter, we opened the ``Tokyo Toyoken'' branch on the 4th floor of Hyakugo Bank in TsuCity.

A store with a dignified atmosphere

The current main store was relocated from the Taisho era building of the Hyakugo Bank Iga Ueno branch, and has an interior that gives you a sense of history.

It has long been a favorite among important people, so there are dishes inherited from Tokyo Toyoken and carefully kept, as well as quotation books for the Imperial Household Ministry.

When I see plates and materials like this, I feel like I have to eat with care. I think so.

Special black curry

KawakitaHandeishi was impressed by the dark curry she ate in Tokyo. Therefore, he asked Shigekatsu Inomata, the first head chef of Tsu's Toyoken, to develop a dark-colored curry. After much trial and error, we perfected Toyoken's signature black curry.

At first, it seemed to have been a secret menu item for regular gourmets, but it became so popular that it became part of the restaurant's menu.

The process begins with Matsusaka beef tallow, flour, and secret spices being stir-fried and roasted to create a black, fragrant roux. After that, the broth, onions, and beef are added and simmered for about a week until they are blended.Finally, the stir-fried beef, onions, etc. are added again and the dish is completed. It takes about a month to make it until it is completed.

The blackened roux has a mellow taste that you wouldn't expect from its appearance, bringing out the natural sweetness and flavor of Matsusaka beef.
