Introducing "Sazanami Toba Branch" in TobaCity, famous for its large fried shrimp! We interviewed Head Chef Hayashi of Ren, which opens up to 60 kg of shrimp during the busy season and serves fried shrimp, and asked him about his cooking methods and ingredients to bring out the crispy texture. In addition to fried shrimp, you can also enjoy sashimi and sake.

Sazanami's signature dish is large, fresh shrimp that are quickly dipped in flour, eggs, and breadcrumbs and fried.

Fried shrimp, in which the shrimp are opened and then fried, is said to have originated from Ren.
It's quite a volume with 3 large shrimp, but it's so delicious that it goes down easily.

The famous "Fried Shrimp Set Meal" comes with fried shrimp, miso soup, rice, and pickled vegetables for 2,750 yen (tax included).

The season for spiny lobster is finally here. You can choose your favorite cooking method from live-zukuri, onigawaraki, shio-mushi, fried, and guzoku-ni.
It's only available until around March, so if you miss it you'll have to wait till next year, so hurry. (The timing varies depending on the year.)

Chef Hayashi is a Japanese cuisine professional who trained in Tokyo and has been the head chef at Ren for 14 years.
When I asked Ren what he sells, he told me, ``Our selling point is simple and delicious dishes that make use of the best ingredients.''

During the holidays, it's so popular that there's a two-hour wait.
