``Naniwa de Omasu'' is one of the shops in SuzukaCity that has long lines. You can enjoy a variety of teppanyaki including okonomiyaki and yakisoba. It has been over 35 years since we opened our business, focusing on ``flour products'' that have a strong image of being authentic to the Kansai region. What is the reason why it has become a restaurant loved by locals? I listened to his story while admiring the sight of the dishes being served one after another with the brilliant handling of a trowel.
Enter the SuzukaCircuit Road from National Route 23 and drive for about 3 minutes until you see a yellow signboard that says ``Maido'' in the Osaka dialect.
But I feel like I've seen this logo somewhere before...
"People often say that it looks like the symbol of a certain TV station. People say, 'You could have copied it,' but we were the ones who created it faster."
says the store manager, Toshihiko Fujimi, with a wry smile.
Since I started working part-time at a store that had just opened, I have continued to work on it for over 30 years, although there were a few years off in the middle.
A sauce that can be called a lifeline. At first, he says he was inspired by the taste of Osaka, the home of okonomiyaki.
However, since some people complained that it was too sweet, they have continued to improve it to suit the tastes of customers in Mie.
They also make subtle changes depending on the season, such as making it spicy in the summer and a little sweet when it gets cold.
The manager and the owner have been working together to protect the store since it opened.
"I only remember the owner being scolded." However, I feel grateful that I am where I am today because of the strict teachings I received. The owner passed away last year. He was so shocked that he thought of closing the store at one point, but after hearing the voices of support from the people around him, he decided he couldn't let it end here.
While you are having a lively conversation with the manager, the okonomiyaki ingredients are spread out on the iron plate with practiced hands.
"During hot weather, the dough tends to sag easily. That's why we use different flour mixtures in summer and winter." Truly a professional technique! You can see that secret efforts are being made in places you can't see.
The unique feature of this restaurant's okonomiyaki is that it uses standard ingredients such as squid, pork, and shrimp to the base dough, and can also have over 10 types of toppings such as spinach, bean sprouts, and pumpkin.
There are so many variations, so it's a good idea to try different combinations each time you visit to find your favorite flavor.
The signature Naniwa special (1,480 yen/excluding tax). The pork is topped with potatoes, kimchi, shiitake mushrooms, and green onions, making it very filling!
The sizzling sound and the smell of the sauce burning will whet your appetite.
At the end, he playfully draws an Anpanman-style face with mayonnaise. This mayonnaise art? Apparently there are other patterns as well, so you can enjoy it as a little surprise.
When you put it in your mouth, the soft dough, the sweetness of the cabbage, the umami of the shiitake mushrooms, and the spiciness of the kimchi hit you all at once, making it truly a specialty!
Yakisoba (730 yen/tax excluded) with squid and pork is also a firm favorite. The exquisite way the sauce is mixed with the crunchy cabbage and chewy, slightly thick noodles is worth seeing!
A variety of toppings are also available, including fried eggs, chives, and bean sprouts.
Toro Tama Soba (1,180 yen/tax not included), which is fried noodles topped with a creamy egg, is a popular dish among women due to its gorgeous appearance. Many people also top it with cheese or kimchi.
The menu was created based on customer requests for ``something like this.''
Another point is that they have a full menu of a la carte dishes. While waiting for your okonomiyaki or yakisoba to be cooked, it will be served at the right time.
First up is the thick-sliced bacon (850 yen/excluding tax). I thought it would be a simple seasoning with only pepper, but it had a slight sweetness... Apparently it's sprinkled with honey. This seems to be done to balance the saltiness so that it doesn't get too salty.
Grilled asparagus (570 yen/excluding tax). In addition to this, there is a rich lineup of vegetables, including grilled eggplant, stir-fried mushrooms, grilled shiitake mushrooms, sliced tomatoes, and stir-fried bean sprouts.
Simple cooking methods and seasonings bring out the original taste of vegetables themselves.
Salt-grilled squid (520 yen/excluding tax). Apparently, they use large purple squid, which has a reputation for not becoming tough even when grilled. The meat is thick, but it's soft enough that you don't notice much crunch, and the flavor spreads in your mouth.
Potato cheese small (480 yen/excluding tax) is often ordered by women. ``Women like dishes with cheese on top, after all.I think the sweetness of ketchup also appeals to women,'' says the manager.
The finest domestic beef fillet teppanyaki (2,780 yen/excluding tax) is the perfect dish to order on a special day. "We are confident in the quality of our meat," he says, as he purchases his meat from Asahiya, a well-known and well-known restaurant in Mie Prefecture.

Since it is close to SuzukaCircuit, it is crowded with drivers and media personnel during races. Some people have been coming every year for about 15 years in a row. Of course, there are also table seats for families and girls' parties. Every seat is equipped with an iron plate, so you can enjoy the piping hot menu on the spot.
The store also takes care to keep children from getting bored, such as by placing many stuffed animals and providing sweets.
A beckoning cat that catches your eye when you enter the store. It is a symbolic presence that has been displayed ever since it opened.
``I once calculated how much okonomiyaki I've baked so far would stack up.Roughly speaking, in about three years it would be as tall as Mt. Fuji.If you think about it, it would be about 10 times the size of Mt. Fuji. ”
Together with the store manager, we have watched over these long years.
SuzukaCity is home to many large companies, and in exchange for encounters, there are also farewells.
``A regular customer told me that today would be the last time I would come to this store because I had been transferred.As a farewell, I was told that today's payment would be fine...This has happened many times before. I'm not making any money doing this.''
