"Shosuke" is famous as one of the few inns in Mie Prefecture where you can enjoy "Shishinabe" all year round. It is also known as a spot where high-quality natural hot springs flow continuously 24 hours a day. We sat down with Shosuke, where guests come from inside and outside the prefecture in search of homely hospitality and a sense of peace, and sat down to listen to their stories while savoring the famous shishinabe.

If you drive for about 10 minutes from Kintetsu Yatomi Station, you will see a large signboard that says "Shosuke".

If you make a reservation in advance, a car will come to pick you up at the station, so feel free to inquire.

It is close to popular tourist attractions such as Nagashima Spaland, Nabananosato, and KyukaPark, and is often used by couples and families.

Shosuke was founded in Cape Kiso in 1983. For the past 37 years, we have continued to operate our business, striving to ensure the safety and security of our customers.

In recognition of our sincere attitude, we have received the Mie Prefecture Governor's Award twice, once in the culinary service category and once in the excellent facilities category.

``It's not a glamorous place, but we place great importance on creating a relaxing atmosphere,'' says the owner, Koichiro Kadono.

It has a quiet and relaxing atmosphere with rural scenery surrounding it.

Many celebrities and celebrities often visit here with their families and friends in search of simple and warm hospitality.

The sight of the entrance makes you feel somewhat relieved. The unpretentious, homely atmosphere that makes you feel like you've come home is probably what makes it irresistible for regular customers.

Accommodation starts from 8,000 yen (excluding tax and service charge) per person on weekdays, including one night and two meals.

Recently, the number of foreign guests seeking the atmosphere of a Japanese-style inn is increasing.

When talking about Shosuke, one thing that cannot be missed is ``Shishinabe.'' Our motto is to only use meat from female boars that live at the foot of Mt. Odaigahara, a scenic spot in Mie Prefecture.

The wild boars that are caught are exposed to the clear waters of the Miyagawa River for half a day by local fishermen, and only the highest quality meat is purchased.

Mr. Fumio Shibayama is the head chef. After working at numerous restaurants, including as head chef of Japanese cuisine at Yokkaichi Miyako Hotel, he decided to become Shosuke because he wanted to put his own cooking philosophy into practice.

In addition to our creative menu, we also add our own unique twist to traditional shishi hotpot, evolving it into a more sophisticated taste.

His insatiable passion for cooking has been recognized, and in the past he has received awards such as the Liberal Democratic Party President's Award and the Osaka Governor's Award.

A secret miso that is the base of shishinabe. When I asked the husband, ``What's in it?'' he replied with a wry smile, ``It's a bit...''.

However, I was told that they use 7 different materials in addition to walnut.

The head chef decides on the mixture himself, and it takes about half a day to knead it.

Shishi nabe prices vary depending on the content, ranging from 3,500 yen to 10,000 yen (excluding tax and service charge) per person.

You can feel the care taken by the head chef, who has mastered the art of Japanese cuisine, in each and every arrangement.

We use locally produced Koshihikari rice. You can also use the natural hot springs for free if you order food.

The shishinabe meat is so vividly arranged that you hesitate to put your chopsticks on it. Its shape is reminiscent of a peony flower, so it's no wonder it's also called ``peony meat.''

In addition, boar meat is low in fat and calories, and is rich in protein and vitamins, so it is good for your body even if you eat a lot of it.

Add burdock, radish, carrots, etc. to the secret miso sauce, and when it comes to a boil, add the boar meat!

The scent of the secret miso fills the room, and your appetite increases.

And then, the fully cooked boar meat was right in front of me... Irresistible anymore!

When you put it in your mouth, the melt-in-your-mouth flavor of the soft meat soaked in miso spreads on your tongue. Ah, Shiawase! Shosuke's boar meat does not become tough even if it is overcooked, so you can enjoy its soft texture until the end.

Many people say that their image of shishinabe has changed, and women in particular often say, ``It was easier to eat than I expected.''

The ``Boar Suki & Grill'', which offers two different flavors, costs 5,000 to 10,000 yen per person (excluding tax and service charge *limited to hotel guests only). Low-fat wild boar meat caught mainly in the summer is said to go well with this hot pot.

While shishinabe is thought to be eaten during the cold months, this boar suki & grill is often ordered in the summer as a stamina meal.

A two-tiered pot that the owner had gone out of his way to find. You can also quickly grill it on the top shelf and eat it with simple seasoning.

The sukiyaki on the lower level is simmered using original warishita that matches the quality of the meat and contains koji and daiginjo sake lees. The real thrill of sukiyaki is listening to the simmering sound and waiting for it to be ready to eat.

When you think of sukiyaki, you think of beaten eggs. Dip the meat into your mouth with your chopsticks.

The flavor of the warishita, the mellowness of the egg, and the umami of the wild boar meat come together to create a texture that is different from regular beef.

There are very few examples in Japan where you can eat wild boar meat sukiyaki-style, and there are fans who come here regularly to try this taste.

``Soft boiled boar'' is a creative dish that looks like something you'd find in a French course.

People are often surprised and wonder, ``I never found such a stylish dish.'' The thick boar meat is boiled so thick that you can cut it with chopsticks, and the head chef's special demi-glace sauce is poured over it.

Accompanied by colorful vegetables, this dish is popular among women because of its beautiful appearance.

Now, let's head to the hot springs. Shosuke no Yu is a natural hot spring that flows continuously 24 hours a day.

The source of the hot springs is the nearby Kisosaki Onsen, which was created in 1966 by digging continuously day and night for six months, and even now, 1,000 liters of 62℃ water gushes out every minute.

The water temperature is maintained between 37°C and 40°C by adjusting the flow, without adding or heating the water at all.

According to an analysis by Gifu Pharmaceutical University, the total ingredients are 536 milligrams, making it one of the best hot springs in Japan.

In addition, in Tadanori Matsuda's ``Hot Spring Inn Rating Guide'' (published by Shinchosha), only 145 hotels were selected out of approximately 15,500 nationwide and received a 2-star rating (definitely worth visiting).

It is truly a famous hot spring that is well known among hot spring fans.

When you scoop it up with your hands, the color of the hot water is pale yellow, but it is almost odorless and feels slimy as it sticks to your skin. This... seems to work.

As expected, since the water is fed directly from the source, your whole body will feel smooth and moisturized once you enter the bath, and it seems to be particularly effective for beautifying and beautifying your skin.

Of course, if you are staying overnight, you can come in 24 hours a day and as many times as you like.

There are nine guest rooms available for overnight stays, accommodating approximately 40 people. Although there are no luxurious furnishings to be found, each room has a calming feel and conveys a time-honored Japanese atmosphere.

When I entered the room, I immediately changed into a yukata... Hmm, I think it's relaxing.

Since its founding, Shosuke has had shishinabe as its signature menu. The lack of successors to hunters is currently the biggest problem.

``The taste of wild boar meat changes greatly depending on where it is hunted and the environment.What if there were no more people hunting wild boars around Odaigahara...'' says the owner.

It seems that boar meat grown in other regions cannot bring out the flavor that Shosuke has always preserved.

With this in mind, he said strongly, ``Of course, even if there are difficulties, I will continue to make Shishi Nabe as long as I can.''
