Founded in 1575 as a teahouse to welcome worshipers at IseJingu. 

``Kadoya'' was founded in 1575 as a tea house to entertain and welcome tired travelers from the long journey to IseJingu, making rice cakes, miso and soy sauce, and has been passed down from generation to generation as Nikenjaya-Mochi Mochi for over 440 years.

In 1997, the 21st generation owner, Shigemune Suzuki, took on the challenge of making craft beer by utilizing his miso and soy sauce brewing techniques.

At first, craft beer production started in a corner of the brewery, but in 2018 we expanded the scale and moved to a new factory, with the aim of delivering it to as many people as possible. Maintenance.

Our factory manager, who has knowledge of brewing, and staff who have acquired specialized knowledge work day and night to research how to make delicious beer.

Pale ale that won consecutive gold medals at British competitions. 

Pale ale is a golden to copper-colored beer that originated in England and is characterized by a rich aroma of hops and malt.

From 1887 (Meiji 20), there was a fantastic beer called ``Shinto Beer,'' which was made using British-style top-fermenting yeast for just five years in Ise.
With the desire to reproduce this local specialty, when we started brewing beer in 1997, the first beer we made was `` Pale Ale.''

With the goal of becoming "the best in the world in 5 years," we continued research and improvement for the 6th year and received the Gold Award at the Australian International Beer Award (AIBA).
In addition, we won the gold medal in 2017 and 2019 at the IBA (The International Brewing Awards), one of the oldest international beer judging committees in the UK that has been in existence since 1886 and is called the Oscar of the beer world. This beer has won gold awards at both the old and new factories, and is the beer President Suzuki is most fond of.

 

A very satisfying pale ale that goes well with any dish. 

Ise Kadoya's ``Pale Ale'' is a well-balanced and very easy-to-drink beer with rich American hops and a lush aroma of grapefruit and herbs, as well as ripe fruit aromas derived from yeast.

You can feel the thick flavor of malt and the bitterness of hops, but it has a clear taste with no aftertaste. Although it is relatively strong, the aftertaste is very mild and has a sharp taste that disappears quickly, making it a good drink.

A classic craft beer that goes well with any kind of food.

British competition consecutive gold medal winner HIME WHITE 

President Suzuki, who loves microorganisms, had a strong interest in yeast and began researching yeast himself.
Since around 2010, we have continued to research whether it is possible to collect natural yeast from Ise that would be suitable for craft beer so that we can give back to the local community, and finally arrived at a natural yeast with a spicy ester aroma.

* "Ester aroma" is a flavor component that is produced when malt is fermented by the action of yeast.

In order to bring out the characteristics of this natural yeast even more, we chose a Belgian white ale style as a base, and the resulting product is ``HIME WHITE.''

Generally, orange peel is used, but this ``HIME WHITE'' uses yuzu peel.
In addition, by using a small amount of coriander, which has a slightly peculiar taste, the spicy scent of natural yeast and the refreshing scent of domestically produced yuzu peel are made to stand out even more.

It is made with a focus on the harmony of all elements, such as the sweetness and richness of malt, the pleasant taste and sourness of wheat malt, the bitterness and aroma of hops, and the refreshing accent of yuzu. It seems that it was named "(Hime)".

Because it uses less wheat malt than regular white ale, it has a light taste and retains a unique flavor, but the mild bitterness makes it a very easy-drinking beer.

Japanese food is the best with HIME WHITE, a refreshing white ale! 

White ale has a rich foam, aromas of citrus and spices, and a soft acidity with a yogurt-like taste.It is recommended to pair with lightly seasoned dishes.

Hime White is characterized by the scent of natural yeast from tree sap collected in IseCity and the scent of domestic yuzu, and Japanese food is recommended as a dish to enjoy with it! It is said that it goes especially well with sushi.

A beer with a name that will catch your eye: Neko ni Hiki 

The name “NekoNihiki” caught my eye, and I wondered if Neko was a cat? When I looked at the product, I noticed that the packaging featured two cute cats cuddling, which is unusual for a beer. What is the relationship between cats and beer?

When I asked him about it, I learned that for a long time, breweries used to have pet cats called ``Brewery Cats'' to protect the malt from rats that preyed on it.
In addition to this historical background, the president of the American brewery that President Suzuki co-developed with also owned a cat, so the product was named "NekoNihiki" as a collaboration between cat-loving owners. He said.

Let's collaborate using each other's original yeast in 2016! Culmination Brewing Co., of Portland, USA, has created a beer using Ise Kadoya's original natural yeast.
As the second step, a representative from Culmination Brewing will come to Ise to brew New England IPA, which is popular on the east coast of the United States, in Ise, and this ``NekoNihiki'' Complete.

New England IPA is originally an India Pale Ale that originated in England, but it was uniquely developed on the East Coast of the United States by using a lot of hops, and was established as a new style. This is a beer style that emphasizes the aroma and soft texture, and suppresses bitterness.

It is also characterized by its cloudy appearance with the yeast still floating.

New England IPA was not yet well known in Japan. With its cute cat packaging and impactful name, this product pioneered the spread of a new beer style in Japan.

This beer has a fruity aroma created by four types of hops, a juicy and gentle sweetness, a rich variety of flavors, and an alcohol content of 8%, which is a little high for a craft beer, so you can enjoy the lingering aftertaste. The president's recommended ways to drink include ``a relaxing drink after a meal or after a bath,'' ``a drink before bed,'' and ``Enjoy just beer at the end of the day.'' "apparently.

Hazy IPA that you can refill many times

Hazy IPA, a new style derived from IPA, is a beer with a very bright hop aroma and juicy taste.

Ise Kadoya's ``Hazy IPA'' uses a different hop Galaxy from ``NekoNihiki'', and has a refreshing scent like passion fruit, with a citrus scent added, making it rich yet light. I tried to give that impression.

It retains the juicy taste of NekoNihiki while reducing sweetness, making it a refreshing and easy-drinking beer.

A classic IPA with a clear and strong hop aroma and flavor. 

Ise Kadoya, which has been brewing various IPAs (India Pale Ales) since its founding, has once again started working on the classic American West Coast IPA, which is characterized by a rich citrus hop aroma, distinct bitterness, and a clean drinking experience. This IPA is brewed.

Based on our past knowledge and experience, everyone is good at it! In order to create an IPA that people will enjoy, we aim to make it easy to drink, so we add all hops late in the brewing process, and in order to create a clean mouth, we have devised a brewing process that suppresses the malt flavor and enhances the body and aroma.・They have carefully balanced the bitterness and created a taste that will not make you tired of drinking.

This Ise Kadoya IPA has a sweet, melon-like, fruity scent with a citrusy feel from three types of hops, accented with a hint of spiciness, and allows you to enjoy the flavor and aftertaste of the hops.This IPA from Ise Kadoya has a good balance of sweetness and bitterness, making it a satisfying drink. Because of this, it is suitable for hearty meat dishes. On the other hand, it is said to be unsuitable for plain-tasting Japanese cuisine.

Isekado's new standard XPA, which promotes beers with a strong hop character

XPA is an abbreviation for Extra Pale Ale, meaning a special pale ale.

We use three types of pop that have a strong impact, and increase the amount of hops used to enhance the aroma. Furthermore, in order to highlight the presence of hops, they use Pilsner malt to lighten the malt flavor.

It is a dish with a refreshing color, a soft and sweet hop aroma, and a light malt flavor followed by a clean and clear bitterness that tightens the aftertaste.

This beer is lighter and hoppier than IPA, which has a strong pop feel and is very drinkable, but it is also drinkable. Apparently it's a popular beer style in Australia and other countries.

I started making beer because I love microorganisms and became interested in yeast.
