Therefore, the seafood caught by Ama divers is the freshest and ``undamaged''.
This makes it a highly valued and popular product.

 

Ama divers work two to three hours a day.

The bamboo basket contains freshly caught spiny lobster, black abalone, turban shell, and dried fish.
There's also a cypress fan shell and a giant squid that's still moving!
The cast iron pot is filled with fluffy hijiki rice and miso soup with seaweed.
(Mie Prefecture has the highest yield of sea lettuce in Japan!)


Now, let's bake it!

Even though I'm hungry, I can't help but marvel at the ama's charcoal grilling techniques.

Based on our many years of experience, we judge the various sizes of ingredients, meat quality, and taste, and control the heat to the best possible level.

Each bite of the huge cypress fan shell that the Ama divers have just caught has a thick, elastic texture that fills your mouth with the deliciousness of the ocean.
