Henbaya Shoten is a long-established Japanese confectionery store that sells Henba-Mochi, one of Ise's specialties. Approximately 200 years have passed since its establishment in the Edo period, and at the time it was a place of relaxation for people visiting Ise Shrine, and today it continues to be widely loved by locals and tourists alike. Many people will become fans of this rice cake, which is made with browned dumpling skin on both sides and wrapped in strained bean paste that melts in your mouth! This time, we took a deep dive into Henba-Mochi!

Henba-Mochi, with its trademark round, flat shape and grilled color, is one of the Ise specialties that has been loved by both locals and tourists for many years. This is the signature product of the long-established Japanese confectionery store "Henbaya Shoten."

Local people have been eating this rice cake since childhood.
When I tried it, I found that the skin was chewy and soft, and the bean paste was soft and not too sweet. It's so delicious that once you eat one, you can't help but reach for another one.

In order to find out the secret behind the deliciousness of Henba-Mochi, we specially took a tour of the factory where Henba-Mochi is made!

All materials handled by Henbaya Shoten are carefully selected domestically!
Henba-Mochi has a shelf life of two days, including the date of manufacture.
We want you to enjoy the taste of the ingredients, so everything is made early in the morning, without adding additives to make it last longer.

This is a process called a hoanki, which wraps the bean paste in dango dough.

The dough for Henba-Mochi is actually not made from glutinous rice, but from Joshin flour, which is used for making dumplings. This is said to give rise to the unique chewy texture of Henba-Mochi.

Next, use a roller to make it evenly flat!
It's starting to look like the familiar Henba-Mochi!
After this, I will put it on the iron plate and grill it.

Once it was cooked just right, the griddle turned over and the grilled marks came out!
It's amazing to see it like this!

It's now complete! However, after baking, the process of cooling begins immediately.
This is an important step in Henba-Mochi, and is said to be the secret to the firm, soft, and elastic texture of the mochi.

The taste and softness of the dango dough and filling change daily depending on the season and temperature. This exquisite adjustment is made every morning by experienced craftsmen to maintain the taste of Henba-Mochi.

By the way, do you know the meaning of "henba"?
The origin of the name "Henba" is surprisingly unknown to many people.

About 200 years ago (Yasun'ei 4th year), this teahouse opened on the banks of the Miyagawa River on the Sangu Kaido Road, and people who came to Ise Shrine on horseback would take a break at this shop in front of the Miyagawa River. It is said that it was given the name Henba mochi (henba mochi) because people visited the shrine after returning the rice.


At the current Oharai-Machi store, we want tourists to know about its origins, so they welcome us with an object that recreates a horse from that time.

This is how Henba-Mochi was made back then.
At that time, everything was made by hand. This taste has been passed down from generation to generation and is now in its 10th generation. Inheriting the ideas of our predecessors, we have continued to maintain the same taste since our founding.

There are various lineups of Henba-Mochi that can be purchased according to the occasion. You can buy the standard 10 pieces (Kyogi) for 800 yen or the individually wrapped 5 pieces in a square box for 500 yen, so you can make them as souvenirs for yourself or your family, or share them at work!

Of course, it's best to eat it right away when it's freshly made, but even after it's hard, you can lightly fry it in a frying pan to restore its softness and aroma!
I actually tried it! The warm Henba-Mochi is also delicious♪

Henbaya Shoten also sells Ise GreenTea, a unified brand of tea produced in Mie Prefecture. You can enjoy three types of tea, hojicha, green tea, and brown rice tea, specially blended by tea farmers in Watarai, a town next to IseCity, in a convenient tea bag.
