``Okonomiyaki Kokoyanen'' is a restaurant that originated in Kyoto where you can enjoy okonomiyaki and monjayaki made with a slightly sweet natural sauce on a griddle. You can relax in the sunken kotatsu seats and semi-private rooms, and you can rest assured that we have taken thorough measures against infectious diseases. What does "Okonomiyaki is here" mean?

``Okonomiyaki wa Kokoyanen'' is a restaurant that serves okonomiyaki, monjayaki, yakisoba, and other a la carte dishes that are perfect for drinks and snacks.

The chain operates in the Kansai and Tokai areas of Kyoto, Osaka, Mie, and Gifu, with one store in Mie Prefecture in IgaCity.

Our signature menu items, okonomiyaki and monjayaki, are made with great attention to detail.

This time, I heard that this store was selected as an excellent store in the "Mie Anshin Mie Ria" certification system, so I went to actually interview it!

Each table has a spacious iron plate that can accommodate 4 or more people, and you can have the Monjayaki grilled on the spot by an employee.

The okonomiyaki is served on a griddle at the customer's table, so it stays warm until the last bite.

Initiatives to prevent infectious diseases

Equipped with a large-capacity ventilation fan that replaces the air in 3 to 4 minutes!

A large-capacity ventilation system is installed on the large iron plate in the kitchen, which exhausts air including the air from the audience seats.

Ceiling fans are installed for every 2 to 3 tables in the customer seating area, creating an environment where the air inside the restaurant is replaced every 3 to 4 minutes. Additionally, we regularly open the entrances of our stores to allow more fresh air to reach our customers.

You can visually check the effectiveness of ventilation measures with the carbon dioxide concentration meter installed at the entrance. At the time of the interview, the level was 400ppm, well below the standard value of 800-1000ppm.

Implementing thorough infectious disease control measures for customers and employees

All employees wear masks, wash their hands and have their temperatures taken when they come to work. To keep the store clean, all stores have dedicated hygiene keepers who clean and disinfect during business hours.

Wearing yellow jackets with the words ``Hygiene in progress'' written on them, we thoroughly clean every corner of the store, including customer seats, restrooms, and entrance handles.

When customers arrive, we conduct contactless temperature checks and disinfection, and we distribute sheets to disinfect tables.

Atmosphere and appearance inside the store

There are semi-private table seats for small groups of 1 to 4 people, and horigotatsu seats for large groups. In order to maintain an appropriate distance from the seats next to you, the semi-private seats have high partitions, and the tables in the horigotatsu seats are spaced apart.

The partitions in the semi-private rooms can be removed, so it can accommodate a large number of people. All seats are non-smoking, making it a safe environment for guests with children.

Food report on popular menus

Kyoto-style salt monja “Camembert cheese monja (1480 yen including tax)”

There are two types of Monjayaki: salt and sauce, and the most popular is the salty-based ``Kyoto-style Salt Monja.'' For this interview, I ordered the ``Camembert Cheese Monja,'' which is Kyoto-style salted monja with a whole piece of camembert cheese in it.

I wanted the food to be even more delicious, so I asked an employee to grill it on the spot. The skillful and dynamic way they are grilled is like watching a performance.

Being able to eat freshly made food on the spot is unique to Teppanyaki restaurants.

The taste is... The dough has a rich, salty taste, and is packed with crunchy vegetables. The melty texture and richness of camembert cheese is added to this, making it so delicious that you can enjoy it with your chopsticks.

Since we shared the food on the iron plate, it was great that it stayed piping hot until the end.

Food report on Okonomiyaki “Suji Nikutama (1023 yen including tax)”

It's very healthy because it's loaded with vegetables, but it's also big and thick, so it's filling! The dough has a rich flavor with the soup stock and is characterized by its fluffy texture.

The vegetables used as ingredients have a crunchy texture and are addictingly delicious!

Each table has bonito flakes, mayonnaise, and sauces with different flavors, and there are two types of sauces: amakuchi and karakuchi.

``Amakuchi'' was a slightly sweet sauce with a gentle texture, and ``Karakuchi'' was a delicious and spicy sauce with a punch.

The bonito flakes are cut into large pieces, so they are very filling!

For this interview, I ordered the large size, which is one size larger than the regular size. It was the perfect size and portion for two people to share.

There are several types of okonomiyaki to choose from, including pork balls, squid balls, sinew meatballs, and pork kimchi balls.The sinew meatballs I ordered contained large, soft pieces of sinew meat.

You can also use the touch panel to refill cold drinks and add plates and chopsticks. It's great that you don't have to worry about having to call the store clerk to add more chopsticks.

Thorough infection control measures and a comfortable ordering system using a touch panel created an environment where you could enjoy Teppanyaki with peace of mind even during the coronavirus pandemic.
