Yotaro Sushi (KihokuTown) "Sanma Sushi"
The ``Sanma Sushi'' (600 yen) of ``Yotaro Sushi'', where the second generation has inherited the taste of the previous generation, is a unique vinegar that uses seasonal citrus fruits in the pickling vinegar in which the sanma is marinated. By lightly pickling it, a slight citrus scent spreads out, and you won't feel the unpleasant fishy smell of saury.
Also, it is unique to this restaurant that sesame seeds are included in the vinegared rice. The aroma and texture of sesame will whet your appetite.
The ``Red Sea Urchin Bowl'', which is made with plenty of red sea urchin, which can only be tasted for two months during the summer, is also a must-try dish if the time is right. Please note that fishing may not be available depending on the weather, so please call ahead to confirm.
Next to the restaurant is Katakami Pond, a rare saltwater pond, and the surrounding area has been set up as a promenade, so why not take a leisurely stroll while enjoying the scenery after your meal?

Manryo Sushi (KihokuTown) "Sanma Sushi" "Yaki Sanma Sushi"
Manryo Sushi is located in front of Kii-nagashima Station on the JR Kisei Main Line. The cheerful and cheerful 3rd generation owner and his family will welcome you warmly.
Sanma sushi (470 yen) is made by opening the saury first thing in the morning, removing the odor with salt, washing it with vinegar to prevent it from becoming fishy, and carefully preparing it before dipping it in sweet vinegar.
Because the down train has a long stopping time of 30 minutes and the up train takes an hour and a half, many people eat it at the restaurant while waiting for the train and are so delicious that they buy some as souvenirs. Additionally, people who have tried the saury once will often come all the way from far away just to buy saury sushi. It's so popular that some regulars order in bulk for their neighbors every month and come to the store to pick it up.
Since many customers take their sushi home with them, the sushi has a strong Kansai-style flavor. Uses fatty saury from Hokkaido. The flavor of the saury blends well with the rice, and you can enjoy the same taste even after a while.
The grilled saury sushi (580 yen), which is coated with homemade sauce and grilled on the surface, is another recommended item that will whet your appetite with the fragrant aroma of the saury.
For those who want to try both, there is also the ``Aji Comparison'' (580 yen).

The ``Buri Bowl (1,500 yen)'' and ``Tataki Bonito Bowl (1,400 yen)'' made with locally caught yellowtail are also good value and seasonal menu items. The nigiri platter is made with fresh local seafood and costs 2,000 yen for 10 pieces. Prices that can only be achieved because we are local.

Sugisushi (KihokuTown) “Sanma Sushi”
A shop made entirely of Japanese cypress wood, located in the center of Aiga, Kaizan Ward.
Pacific saury with different head, tail, and meat thickness. If everyone shares a piece of saury sushi, there will inevitably be differences in the amount of saury. I wondered if there was a way to eliminate this inequity, or if there was a way to make it easier for everyone from children to the elderly to enjoy delicious food. The restaurant's ``Sanma Bo Sushi'', which has been granted a utility model patent, was created through trial and error. (800 yen)".
Sanma stick sushi, which is made using three pieces of saury, has no bones or fins, so you can eat it without tearing it off, so it's easy to eat, and the thickness is the same no matter where you eat it. It is also distinctive that it has kelp and green perilla.
Please try the ``Paury Stick Sushi'' that is also dedicated to IseJingu.
The gorgeous ``Kami Chirashi'' (2,100 yen), which many fans come from far away just to enjoy, is also recommended.

Also unique to this restaurant is the ``Oyster Sushi'' (1,320 yen for a box) made with Watari oysters, which are said to be fantastic oysters grown in the small brackish Lake Shiroishi Lake, as well as full courses of Watari oysters. There are many regular customers who come from far away every year. *Watari oysters are a winter-limited menu.

OwaseOsakanaIchibaOTOTO (OwaseCity) "Saury Sushi" "Ryoeimaru's Heaps of Tuna Bowl"
A direct-to-farm market directly managed by a seafood company in Owase. ``Owaseo Uo Ichiba Ototo'' is where you can enjoy fresh seafood caught in the Kumano Sea. Not only can you buy fresh seafood caught first thing in the morning, you can also eat it at the restaurant inside the store, ``Owase Fish Shokudo.''
The simple, old-fashioned Sanma Sushi (500 yen) is handmade at the restaurant. In addition, the seafood bowl toppings, which use locally farmed yellowtail and local fish, are surprisingly large. We also recommend the ``Ryoei Maru's Heaped Dokkan Tuna Bowl (970 yen),'' which can only be eaten when the company's inshore tuna longline boat Ryoei Maru unloads. The big catch flag flying in front of the store is a sign that the catch has been landed.
Owase has many fishing methods, including the prefecture's only bottom trawling, fixed net fishing, and free diving by Ama divers, and there is a wide variety of seafood that can be landed. There are also rare fish that can only be seen here.
``Owaseo Uo Ichiba Ototo'' is fun to look at and delicious to eat.If you go to Owase, you should definitely stop by this restaurant.

Kiraku (KumanoCity) “Saury Sushi”
JR KumanoCity Station. "Kiraku" is an old-fashioned restaurant that stands alone in front of you, and is a place for locals to relax. The interior has a cafe-like atmosphere and is always crowded with local regulars.
As a popular restaurant, the menu is varied to satisfy the stomachs of local people. One of the most popular is ``Sanma Sushi''. It is a flavor that has been loved for over 70 years in Kumano, the birthplace of Sanma sushi.
The back-opened saury with a tail end is well marinated using the traditional method, making it feel like the original sanma sushi. Mandarin vinegar is used to pickle the saury, and yuzu is also used to add flavor, so even though the saury is pickled well, you won't feel any unpleasant vinegar strength.
If you come to Kumano, you should definitely stop by this shop.
