Wadakin is a long-established Matsusaka meat restaurant that everyone wants to visit at least once.
We are particular about traditional lines, purchasing only female Tajima beef calves from Hyogo Prefecture, and carefully raising them on our vast in-house farm so that we can serve them when they are in the best condition.
One of Wadakin 's favorites is the Sukiyaki (Matsu 18,200 yen + 10% service charge). Sugar, secret tamari soy sauce, and a little bit of kelp stock bring out the flavor of Matsusaka beef itself. When you hear beef mizutaki, do you mean shabu-shabu? You may think so, but it's not shabu-shabu.
At a time when there was no shabu-shabu, the first owner of the restaurant wanted to create a new specialty dish using Matsusaka beef, so he took a cue from Tecchiri and developed Matsusaka beef, which is thicker than shabu-shabu but slightly thinner than yakiniku. Miyamotoya started in a barracks shortly after the war. It continues to be loved by locals and is now large enough to accommodate groups of 50 people.
The combination of fresh Matsusaka beef offal (660 yen) and the homemade miso sauce, which has been preserved by the third generation to preserve the original taste, is exceptional. The owner and chef, Mr. Ogura, is a chef who has won awards at numerous competitions, but he is also a potter. All of the tableware used in the restaurant is Mr. Ogura's work.
The vegetables are sourced from contracted farmers in MeiwaTown, and the Matsusaka beef is sourced from a nearby ranch and aged for at least a month. The red sea bream is shipped directly from Mr. Nakabayashi in MinamiiseTown. In any case, we are extremely particular about local ingredients.
