Oyachi Somen is made from cold Suzuka grated rice and the clear waters of the Asaaki River.
It is said that a traveling monk once taught this secret method, and it is known for its strong chewy texture and smooth texture.
Making somen requires a lot of effort, starting late at night on a bitterly cold day, but with the skill of the hands and the sincerity of the people, the finished product is a beautiful piece of shiraito. The firmness and smooth texture are unique to hand-made noodles.
