Matsusaka chicken grilled meat

Chicken is mixed with a rich sweet and spicy miso sauce and then grilled. The smoke is thick and the aroma of miso is in the air, making it a favorite among people of all ages.
The type of chicken varies slightly depending on the store, but young chicken (a mixture of breast and thigh) and hine chicken (parent chicken) are commonly eaten.

“Why is chicken yakiniku now available in Matsusaka?”
▸Since the Showa era, many households in areas with many farms in the suburbs of MatsusakaCity have kept chickens that lay eggs. Then, when the chickens stopped laying eggs, the custom of disposing of them was to cut them at home and then ``put out a shichirin in the backyard and grill the chicken with miso sauce on a grill.'' It is said that he said so. Taking notice of this custom, in the late 1960s, restaurants began to serve this ``chicken yakiniku''.
Since then, it is said that there are currently around 20 shops in MatsusakaCity.

“Why is the miso mainly red miso?”
▸It seems that even here in the Matsusaka region, miso sauce has been commonly seasoned at home for more than 100 years, mainly using so-called ``mame miso'' (red miso). Therefore, farmers who raised chickens often used miso, mainly red miso, so it is thought that this is how they seasoned their chicken at home when grilling it.
