Matsusaka beef is produced in the "former 22 municipalities and former members of the Matsusaka Beef Cattle Producers Association" (the number of municipalities is as of November 1, 2004), the target cattle are "Japanese black cattle and heifers registered in the Matsusaka Beef Individual Identification Management System," the fattening period is "the longest and final fattening period in the production area" and "the cattle that meet the system's conditions such as beef carcass grading and are shipped." Each cattle is fattened by farmers with great care for about three years.
