“Matsusaka Maruyoshi” has been loved for a long time. Yumechin, an influencer from MatsusakaCity, enjoyed luxurious Matsusaka beef sukiyaki at Kamata Main Store!
1. Exquisite! Matsusaka beef sukiyaki that melts in your mouth
This time, we have prepared a luxurious Matsusaka Beef Toro Sukiyaki for two people. (9,350 yen per person. Includes 150g of loin, rice, miso soup, pickled vegetables, egg, and dessert)
This loin is a rare part that can only be harvested from 700kg to 14kg per head! It is characterized by easy marbling and fine texture, allowing you to enjoy just the right texture and rich flavor.
Immediately, the first piece was cooked by a waiter.
Yumechin: ``Thank you very much! It's a special feeling to be able to have the waiter cook the food right in front of you. This may be the first time I've had the food cooked properly.''
Mr. Nakai: ``Now let's start cooking. After grinding the beef tallow, we quickly grill the meat, then sprinkle it with cane sugar and grill it. Immediately add soy sauce and simmer it in our homemade kelp soup stock with sake. I’ll go.”
Yumechin-san: ``You can smell the nice aroma of the soy sauce and soup stock.''
The special feature of Matsusaka's sukiyaki is that it does not use warishita.
Matsusaka-style sukiyaki is made by first grilling the beef and then seasoning it with sugar, soy sauce, and kelp stock.
Nakai-san: ``Please enjoy the first piece as is.''
Yumechin: "At first, it's just like that. Let's eat it! It's delicious...! The flavor of the meat spreads out. Even though each piece was so big, it melted in no time! It had a good seasoning and was delicious. is."
Mr. Nakai: ``At first, we want you to enjoy the umami of the meat, so we eat it as is.Toro has a lot of fat, so we season it well so that the taste doesn't get too muddy.''
Yumechin: “I heard that the soup stock is homemade, but do you use something special?”
Nakai-san: ``It's just soaking kelp in alcohol. It's easy to recreate at home, so please give it a try.''
Yumechin: "That's right. It's easy! If you buy meat at Maruyoshi's butcher shop and then go home, you can recreate Maruyoshi's taste at home."
Mr. Nakai: ``Next, we'll add the vegetables. From this point on, we'll leave the cooking up to the customer. We recommend that you add the meat to the area where there's plenty of stock, so the flavor will soak in.''
Yumechin: “If we can cook it ourselves, we can adjust the taste, and it’s also fun. Do you have any other cooking tips or recommendations for how to eat it?”
Mr. Nakai: ``Please enjoy it with egg. It's delicious if you dip it in plenty of egg.''
Yumechin: “You eat it by mixing it with eggs! I’m going to try it right away.”
Yumechin: "It's nice that it's mild again. It's easy to eat even though there's a lot of marbling. I've never had Matsusaka beef that's so crunchy! The flavor of the meat permeates into the vegetables and it's very delicious. The rice is also good. I’m here.”

The fattening on our own farm is done with a lot of care and love. The cows are not fed with a commercially available compounded feed, but with an original blend of feed, which is tailored to each individual cow. By doing this, you can feed each cow a feed that is appropriate for each cow depending on its weight and physical condition, and it also allows you to have physical contact with the cows. In addition, to prevent cows from coming into contact with each other or people, or to prevent injury, the horns are sometimes removed in a process known as ``dehorning,'' but we do not do this because it causes great stress to the cows. The cows are fattened in their natural state in a clean barn that is thoroughly weeded and cleaned every day.
Each cow is raised with love in this way, resulting in the highest quality Matsusaka beef, which is known as a ``work of meat art'' and has a fine marbling and a well-balanced red color.
